I don't exactly disagree with you. I'd say read books 1-7, then do the cliff notes on 7-11. Definitely read 12+ though, Sanderson does a great job of actually making stuff happen.

Quintet is an awesome series, I have a feeling RA will tie him back into the drizzt saga at some point(beyond servant to the shard).
